Curry Apple Chicken Stir Fry



I made this while I was watching the VOICE earlier this week.  I had a bunch of apples from my freegan haul as well as chicken and plain yogurt from another haul so it was perfect time to make this recipe.  It's so easy and to make it even healthier I served on top of brown rice.  All you do is stir fry your chicken first then add the onions, apple, curry powder and salt cook for about 3 minutes.  Then at the end add a little water and your yogurt and mix and your done.

Pita Bread Lunch Ideas



One of the things I got in my haul this week was Pita Bread.. I never buy it so I was lucky enough to find an awesome book in the library that gave me a super cool idea.  I basically made a pita bread TACO.  All the ingredients from my cheap couponing stock pile and freegan hauls.  I shredded chicken, added beans, lettuce, sour cream hot sauce, tomato sauce and easy meal!  Best part is that I got to use up some ingredients I had on hand.. I hate food waste.

The book had some awesome ideas that I am super excited to try.


The above is stuffed with potato salad.. perfect because I got a bunch of potato's in my last haul.

Freegan Haul


Man my spot is getting super popular.. its just that there's always a ton of stuff even when I showed up late for this food rescue.  It's over $60 of top of the line groceries.  Last week I didn't go to this spot so I'm super excited about eating Organic Salads for lunch this week again :)



Who ever was there before me left these out for any passerby's super cool Rice Paper perfect for Spring Rolls!


And some awesome organic white bread for sandwiches and toast.  I've realized that because I've become so partial to this spot sandwich sliced bread is not always available so I'm definately freezing this.

Not much going on this week but the RAMEN sale! Definately a stock pile opportunity! After ups its $3 for FOUR 6 packs of Ramen!

Juicy Asian Style Burger



This is actually a super easy recipe and its so amazingly delicious.  




Basically the Asian Marinate is soy sauce, salt, and a little bit of cooking wine.  You let it soak for at least 20 minutes.  While you do that chop your onion.  Then after time as past for the meat to marinate, mix in the chopped onion.  You can let that marinate together for a while or just move on to the main reason why this burger is so juicy.

Egg whites!!
I just crack open the top of an egg and pour some whites in to the mixture.  You don't need much just enough for a glaze on your mixture.


And since I don't like to get my hands dirty I lightly shape my patty using plastic wrap.



And then you add to lightly greased pan to cook.





And when your done, your'll have a super super duper JUICY burger.




O and I forgot to mention this meal was pretty much all made from my Freegan Food Rescues except for the cheese, marinate and egg whites!

I got the whole wheat bread and high quality ground beef, onions all from my past food rescues.

Shin Ramen using Earthbound Organic Salads


I love Ramen.. its just so yummi and I don't eat it just because its a super cheap meal to make.  It's actually not that Cheap because I have to have the soup base from Shin Ramyun which the best Ramen ever in taste but also because it has no MSG.. but it can be alot more pricey than the cheap ones from Nissan I get at Rite Aid.  So when I make it I tend to make it again shortly after because Frugal TIP.. I reuse the Spicy base.  It actually tastes better by then because the flavors just seem to marinate.  Any ways.. I put in alot of my organic freegan finds (spinach, mushrooms, carrots) to add nutrients.  I always have frozen duck in the fridge for Ramen if I can.. and usually the non meaty parts because bones create flavor!



Veggie Pasta made with Mario Batalli's Pasta Sauce Recipe



This meal is a combo of a practically free meal because of Couponing and my Freegan Food Rescues.  I had  almost no space in my Freezer so I'd thought I'd start using the High Quality Ground Beef I had rescued recently.  I defrosted a batch of Pasta Sauce I made from one of Mario Battalli's recipes and pulled out some free Veggie Pasta I had.  I browned the meat and then added it to the pasta sauce that I was slowing defrosting.  End result a super HEALTHY, Cheap low calorie Pasta Meal.


And because I'm not calorie counting.. I added a bunch of Parmesan Cheese.




Freegan Haul


I didn't go on a food rescue this week....yet ... but I did realize I'd forgotten to post a freegan haul a couple weeks ago.  So since I had taken the picture.. I 'd might as well post it.  I literally, ate off organic Salads for two whole weeks from this haul!  It was the one I referred to as the sorta locals fighting over haul incident.  While they were fighting I guess they were not into salads but there was literally a whole huge bag of these Organic Earth Bound Salads in super clean mint condition separated in a clear Garbage bag.  I felt really sad.. that I had to leave so many behind.. I truly did.  But I literally could not carry anything else.  So from this haul I got 9 packages of Earthbound Organic Salad mixes and 3 regular non Organic ones.  I got 2 boxes of ORGANIC cherry tomoto's, Organic mushrooms, 2 bunches of ORGANIC broccoli, chives and 2 boxes of fancy Margarine.  I also got like excellent condition OXTAILs.  It was a great haul and super easy because everything was so easy to find.  Worth about $75.  Only disappointing thing was there was no Bread .. and because I was totally overburdened with all the stuff I had to carry.. I didn't go to any location.

Pret A Manger's Curry Egg Arugula Sandwich


The other day, I got a craving for Pret's Curry Egg Arugula Sandwich...which is so so ridiculously expensive at least $5 for a small meatless sandwich (ok yes PRET does use organic everything and cagefree eggs) but seriously kinda ridiculous.  And then it hit me!!!  I had organic bread for Le Pain Quotidien still in my freezer and lots of organic Arugula from my food rescues.  I basically just hard boiled eggs the prior night and brough some condiment mayo from resturants and put in a zip lock my seasonings of curry powder, salt and pepper and it was the most amazing work lunch ever!

So I'd thought I'd post about it today since I just had to share this yummi cheap meal.

Below are my freegan ingredients.




What you need to make this is 

2 Hard Boiled Eggs
2 Tablespoons Mayo
1 Teaspoon Curry Powder
Handful of Arugula
Salt and Pepper to taste
Bread if you want to make it a sandwich





Add mayo in bowl with seasonings.  Mix.


Add in your hard boiled eggs and mash with back of fork.


Then mix everything or if your doing this at work shake your tupperware.
Adjust seasonings if you wish.  

Transfer mix to your bread that you've layered with Arugula.  


Or if you have left overs just mix in more Arugula for a Salad!

I'm just blown away by how much a difference Arugula makes !








Freegan Epic Hale and Hearty Soups



So I've pretty much been diving at the same spot lately its so much easier to do because I just got and there's always stuff.  What I did realize is that it can be a competitive spot, like last week I got there 20 minutes later than usually and there as a mini fight going on.  Apparently, one diver brought a car to haul a bunch of stuff and a meaner local diver was yelling go back to your own neighborhood.  Pretty much her and her buddy, had a ton of stuff that was amazing from the quick glance I got of her bags.  It just goes to show there is a huge abundance of stuff.  I definately am not getting first dibs but even still look what I got yesterday!  And that day I got the tail wind, everything was super super clean,  which means I must literally be one of the last divers at that spot. They throw stuff out in clear bags super organized and neat.  I remember the packages that night were super clean.

So tonight, was dairy and chicken breast night.  I mean there was so much and it was all in a separate super clean bags, no liquids dripping and nothing smushed (aka it must have just been brought out).  I'm super excited to grab 2 half gallons of Organic milk.  They even had the Moo vanilla milk but honestly this was my heaviest haul ever.  And I am so pysched about the sour cream because I was just debating buying it at the grocery store the other day and now I got it for free!

The other great score was all the chicken breast I picked up the Purdue one's were the kind they pre slice thinly for grilling (something I'd never shell out extra money for) and a bunch of vacuum sealed split breast. The other batch was fancy vegetarian feed chickens, 99% fat free crazy fancy.  I literally got at least 7 packages of chicken breast in this haul.  Food safety tip, smell it look at it (that night it was so so fresh and I good still feel it being cold, and there was no liquids running)  which happens even at the grocery store when they aren't selling super fresh stuff.

And the other super cool thing especially since were were talking about Hale and Hearty all week and how great but expensive their soups are was the 6 pints of Soup I got.  They are also plastic sealed in side, so no safety issue there!


This night I got tons of bread, which I totally needed... now that I know my spot a bit more and someone had already grabbed the pastry bag.


At the very least this haul was over $100 !! I freakin love this Freegan practice!
